It’s almost embarrassing how easy — and pretty! — this spinach and strawberry salad is.
I’m not talking about the condiments. Everyone knows to serve sour cream, cheese, and green onions with chili. I’m talking about the side dish: Corn bread? Sourdough? Tortilla chips?
I’m still in disbelief at how surprisingly satisfying this light little meal really was. It made a great lunch the next day too.
